canola oil spray
125g unbleached all-purpose flour
65g whole-wheat flour
48g unsweetened flaked coconut
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
3 tablespoons vegetable oil
1 large egg
300ml agave nectar
1 teaspoon pure vanilla extract
120ml freshly squeezed grapefruit juice
226g grated zucchini
675g chopped fresh pineapple
Method:
Preheat your oven to 175°C before preparing a large baking tray with a covering of canola oil spray.
Mix together the whole-wheat and all-purpose flour, cinnamon, ginger, salt, baking soda, coconut, and nutmeg in a large bowl.
Using a separate bowl, add the vegetable oil, agave nectar, egg, grapefruit juice, and vanilla, then stir until combined.
To this bowl, mix in the courgette and pineapple until combined.
Fold the flour into the liquid and stir until all ingredients combine.
If it becomes too dry, add a few drops of pineapple juice to add moisturise to the mix.
Pour the batter into the baking tray and place in the oven for 35 minutes.
